I have a confession to make; I am hooked on green smoothies. I used to blend them here and there on occasion, but these days I can’t imagine starting my day without one. Just in case you were wondering, I do enjoy eating greens too. I’ve perfected my kale salad recipe, and often add fresh spinach as a side dish to almost any meal. However, if I have a choice, I have to admit that I prefer to drink my greens in a smoothie. I have a rotation of smoothie “recipes”, and my absolute favorite concoction includes coconut water, a splash of fresh organic lemonade (just a splash, don’t want it too sweet!), a half avocado, about a cup of frozen organic cherries and a generous handful of organic spinach. I never measure these ingredients in the smoothie. For me, part of the beauty is that each smoothie I blend up turns out slightly deliciously different.
